Brownie In A Mug (Gluten Free & Dairy Free)

Do you ever have a craving for brownies, but don’t need a whole pan of them sitting on the counter to tempt you later? I searched high and low for a good brownie-in-a-mug recipe (that was gluten-free and dairy-free) and ended up coming up with this one. It is super simple and we like it better than any of the other recipes I tried. The best part is that it only makes 1 serving, and is done in less than 5 minutes.

Brownie-In-A-Mug:
2 Tbsp Flour (I use oat flour for gluten free folks)
2 Tbsp Sugar
2 Tbsp Cocoa/cacao powder
2 Tbsp Water
2 Tbsp Oil (I do olive)
(1 Tbsp chocolate chips, optional)

This recipe fits well in a standard size mug. Simply add all ingredients and mix well with a fork. I love chocolate chips in mine, though my husband prefers it without. We like a rich, extremely chocolate-y brownie more on the gooey side and not cake-like. If this is just too strong for you, do 2-3 tsp cocoa powder instead of 2 Tbsp. Additionally, if you like a fluffy cake-like brownie add 1/2 tsp baking powder. 

The brownie won’t puff up unless baking powder is added

Place the mug with your brownie concoction in the microwave. Cooking times vary a lot from one microwave to another, for mine 1 minute and 15 seconds is perfect. There is no egg in this recipe so feel free to go on the moist side, or cook a full 1 minute 30 seconds to ensure it’s well cooked. 

Eat it straight out of the mug or scoop it out onto a plate. Top with ice cream, pour some cream over it, or dive right in as-is.

  • 1 Tbsp Chocolate chips (optional)
