Keto Waffles

Keto waffles are such a multi-use food. We make them for breakfast, and make enough to have extras for snacking later. They are great for taking on the road as they don’t need any toppings. Little ones can carry a piece around outside for an afternoon snack.

Traditional waffles really don’t belong the ‘breakfast’ category in my kitchen. On a regular basis, we try to eat more substantial foods in the morning than the quick empty carbs of normal waffles and their toppings. These waffles, though, are not normal. They are made mostly of peanut butter and egg.

If you are low-carb, stop after adding the protein powder and you’ll get 6 waffles (depending on waffle iron size). If a bit more carbs are acceptable, make the full version for 9 waffles. Even the full version is still low-carb and low-sugar compared to the traditional breakfast staple.

Keto Waffles:
8 Eggs
1 c. Peanut butter (or almond butter)
¼ c. Butter (or other fat – see my fats post for more info)
1 tsp. Baking powder
1 tsp. Vanilla
1 serving Stevia
¾ c. Chocolate chips (optional)
1-2 scoops Protein powder (optional)
If not keto, ALSO add:
1/3 c. Coconut sugar
½ c. Oat flour
¼ c. Water or milk

About the Ingredients

The sweetener is optional, but I like it because we rarely dress these waffles with any toppings. A little sweetness makes them so yummy the whole family enjoys them plain.

Skip the chocolate chips if you like. My husband prefers them without, but I’m a chocolate nut. I make a couple waffles without chocolate, then add them in for myself and the kids.

Adding the coconut sugar, oat flour, and more water stretches the batter for more waffles while still being a hearty breakfast. It does up the carbs from 6g each waffle to 14g. If you add the last 3 ingredients it will make 9 waffles. This is my standard batch, but when I am heavily restricting carbs I skip the last 3 ingredients.

The Process

First, start warming up the waffle iron or griddle. We have a cast iron circle-shape waffle iron which is in two pieces and sits on a burner on the stove. I know a lot of folks use an electric waffle iron. Either way, start it warming up.

I like to use my blender for the batter. Peanut butter, especially the fresh ground or natural stuff, is really hard to mix into a batter. This is even more true when it has been refrigerated. To get peanut butter and eggs incorporated together requires a lot of hand mixing, or 10 seconds of the blender on low speed.

Add all ingredients to your container of choice (bowl or blender) and stir. When mixed, pour the batter by ½ cup-fulls onto your hot waffle iron. Use more if your waffle iron is bigger.

Cook the waffles depending on your type of waffle iron. Mine requires it to be flipped over part way through. We cook a little over a minute per side and they are done. They should be lightly toasted and a little brown.
